Hi. So how insecure/privacy disrespecting is it really to use the Monero wallet option that uses a third party server?

Is it just "server knows ip" or can they actually gather any meaningful information

I'm not a pro on this, but in addition to the remote node seeing your IP, your ISP can see the request being made (not the data in that request), and i think someone could in theory get a rough idea of what time you're making transactions.

and if I have 2 versions of the same wallet(say the remote node version on my laptop and the full blockchain on my desktop) will the transactions from my desktop(full blockchain) still be secure?

25 word seed is for your wallet, the node, aka daemon is separate and syncs the blockchain

if you have the node on your desktop then you can use it as a remote node for your laptop without any issues with security

I haven't done so myself and can't give you proper instructions on how to do so but others should be able if you need

this gives you interoperability. For example, you can create a smart contract which sends you USDC when XMR is received by some address
