Docker is as much a third-party as systemd, but can of course prefer "native" system service instead of Docker :) Both guides should serve you well, but Docker greatly simplifies the process, updates, and maintenance.

I'm hoping to get a guide going in the future, but the Monero GUI in advanced mode can also be used as a full node with the proper custom monerod startup flags (there's a field in the GUI for adding custom flags)

if you're connecting to your own vps hidden service node over tor, you hide a lot of the metadata that can be seen by ISP's

probably safe to assume a VPN logs the same amount as an ISP, and going from tor > clearnet > your ec2 is probably a bit leaky as well

if you're using docker, it's very trivial to expose it as a tor hidden service and just use Cake/Monerujo + Orbot or feather wallet on desktop to connect to it remotely

I personally run a node locally, use it locally when possible, and also have it exposed as a tor hidden service for when i'm on the go

a lot of this just depends on your opsec requirement. I recommend just trying different things out and seeing what works best for you. Monero nodes use Dandelion++ which helps reduce the ability for outside observers to know the origin of a tx, FYI.
