You can use tor with p2pool, and it was a warning from day 1 to use a separate wallet address for mining

Just use any guide for installing tor, then run p2pool with "--socks5 127.0.0.1:9050 --no-dns" in the command line. And Monero node should ideally run on the same machine to avoid connecting to it through tor. Your lag will be 200-300 ms to the closest P2Pool peer

If you broadcast your P2Pool shares though tor, they will only know that this wallet address uses tor

And the IP that will be exposed is only the IP of your P2Pool node, not of your miners. So if you run it on a VPS in another country, that's a dead end for most adversaries
