You will probably have to do a lot of "scaling" until you run into problems if nothing else than Monero stuff is running on that box.

It may sound dumb, but first I would do is just restart the wallet. Maybe it lost connection to the daemon somehow and did not catch the tx getting mined, and after a restart it gets on its feet again

Maybe the daemon you use is a bit wonky? I think the GUI wallet usually is pretty reliable, it just uses standard wallet2 inside
